Ingredients

  • 4 medium baking apples about 800 g before coring; about 720 g edible fruit
  • 1/2 cup old-fashioned rolled oats 40 g
  • 1/4 cup chopped walnuts 30 g
  • 3 tablespoons packed brown sugar 40 g
  • 1 teaspoon ground cinnamon 2.6 g
  • 2 tablespoons unsalted butter 28 g, cut into 4 pieces
  • 1/2 cup hot water 120 ml; more if pan dries

Equipment

  • 1 8-inch square baking dish
  • 1 Small knife and spoon for hollowing apples
  • 1 Mixing bowl

Method

  1. Heat the oven to 375°F. Rinse and dry the apples. With a small knife and spoon, remove the stems, seeds, and cores from the top, making a cavity about 1 inch wide while leaving at least 1/2 inch of apple at the bottom. Do not cut through the base.
  2. Stir the oats, walnuts, brown sugar, and cinnamon together. Divide among the apple cavities without compressing firmly. Set the apples upright in an 8-inch square baking dish and top each with a piece of butter.
  3. Pour the hot water into the dish around the apples. Bake for 40–55 minutes, until a small knife slips easily into the flesh and the apples are tender but still upright. Start checking at 35 minutes for small apples. Tent loosely with foil if the filling browns too quickly; add a splash of hot water to the dish if it dries.
  4. Rest for 10 minutes, then spoon the apples and pan juices into bowls. Refrigerate leftovers within 2 hours, or 1 hour above 90°F, and use within 4 days. Reheat leftovers to 165°F.

Notes

Contains milk and walnuts. Nutrition is estimated per apple using 720 g edible apple after coring and all filling and pan juices; optional toppings are excluded. Apples vary in size and baking time.
