Ingredients

  • 1 15.25-ounce can whole-kernel yellow corn drained well; about 285 g drained
  • 1 14.75-ounce can cream-style corn 418 g; do not drain
  • 1/2 cup whole-grain yellow cornmeal 70 g; fine or medium grind
  • 1/2 cup all-purpose flour 62 g
  • 1 cup full-fat sour cream 230 g
  • 4 tablespoons unsalted butter 57 g; melted and cooled slightly, divided
  • 1 large egg 50 g without shell
  • 2 tablespoons granulated sugar 25 g
  • 1 teaspoon baking powder 4 g
  • 1/4 teaspoon fine salt 1.5 g

Equipment

  • 1 9-inch square baking dish about 2-quart capacity
  • 1 Large mixing bowl
  • 1 Medium mixing bowl
  • 1 Whisk
  • 1 Rubber spatula
  • 1 Instant-read thermometer

Method

  1. Heat the oven to 350°F with a rack in the center. Use a small amount of the measured melted butter to grease a 9-inch square baking dish. Drain the whole-kernel corn thoroughly; do not drain the creamed corn.
  2. Whisk the cornmeal, flour, sugar, baking powder, and salt in a medium bowl until evenly combined.
  3. In a large bowl, whisk the egg, sour cream, and remaining melted butter. Fold in both kinds of corn. Add the dry ingredients and stir just until no dry streaks remain. Do not taste raw batter.
  4. Spread the batter in the prepared dish. Bake for 45–55 minutes, until golden at the edges, set in the center rather than liquid, and at least 165°F in the center on an instant-read thermometer. If the top browns early, loosely tent with foil. Continue baking if necessary to reach the endpoint.
  5. Rest for 10 minutes, then divide into eight portions and serve warm. Refrigerate leftovers in shallow containers within two hours, or one hour if above 90°F. Use within 3–4 days and reheat to 165°F.
