Method
- Whisk flour, ginger, cinnamon, baking soda, and salt in a bowl. In another bowl, beat softened butter, brown sugar, and 20 g granulated sugar until creamy, about 2 minutes. Beat in molasses, egg, and vanilla, scraping the bowl.
- Mix in the dry ingredients on low speed only until no flour remains. Cover and refrigerate for 1 hour, until firm enough to roll. Do not taste raw dough.
- Heat oven to 350°F. Line two large baking sheets with parchment. Divide dough into 24 equal balls, about 28 g each. Roll in the remaining 30 g sugar. Place 12 on each sheet, leaving at least 2 inches between them; keep the second tray chilled while the first bakes.
- Bake one tray at a time for 10–12 minutes, until edges are set and tops have cracked; centers should be soft but not wet. Cool 10 minutes on the sheet before transferring to a rack. Repeat with the second tray, then cool completely, about 10 minutes more. Store airtight at room temperature up to 4 days, or freeze up to 3 months.
