Ingredients

  • 680 g fresh green beans 1.5 lb; trimmed and cut into 2-inch pieces
  • 227 g cremini mushrooms 8 oz; sliced
  • 2 tablespoons unsalted butter 28 g
  • 2 cloves garlic 6 g; minced
  • 0.25 cup all-purpose flour 30 g
  • 2 cups 2% milk 480 ml
  • 1 cup low-sodium vegetable broth 240 ml
  • 0.5 teaspoon fine salt 3 g
  • 0.25 teaspoon black pepper 0.6 g
  • 1 cup crispy fried onions 56 g; check package weight

Equipment

  • 1 Large pot and colander
  • 1 Large deep skillet
  • 1 Whisk
  • 1 2.5–3-quart baking dish

Method

  1. Heat oven to 375°F (190°C). Bring a large pot of unsalted water to a boil. Add trimmed cut beans and cook 4–5 minutes until bright green and crisp-tender. Drain thoroughly and spread briefly on a clean towel to remove surface moisture.
  2. Melt butter in a large deep skillet over medium-high heat. Add mushrooms and cook 8–10 minutes, stirring occasionally, until their liquid has evaporated and they begin browning. Add garlic and cook 30 seconds.
  3. Stir in flour and cook 1 minute. Gradually whisk in milk and broth, then add salt and pepper. Bring to a gentle simmer and cook 4–6 minutes, stirring, until sauce coats a spoon.
  4. Fold in drained beans and transfer to a 2.5–3-quart baking dish. Bake uncovered 20–25 minutes until bubbling. Scatter crispy onions over the top and bake 5 minutes more, watching to prevent burning, until the center reaches 165°F.
  5. Let stand 5 minutes before serving. Refrigerate leftovers in shallow containers within 2 hours, or 1 hour above 90°F, at 40°F or below. Use within 3–4 days and reheat to 165°F.

Notes

Contains milk and wheat. Nutrition is estimated per one-eighth of the recipe and includes all crispy onions. Cook time assumes the beans blanch while the mushroom sauce is started. A chilled assembled casserole needs additional baking time to reach 165°F.
