Method
- Heat oven to 400°F. Line a rimmed baking sheet with parchment rated for this temperature. Pat salmon dry and set on the sheet, skin-side down if using skin-on portions.
- Whisk maple syrup, soy sauce, lemon juice, garlic, olive oil and pepper. Set aside 1 tablespoon in a clean bowl for finishing before any utensil touches raw fish. Brush remaining glaze over salmon.
- Bake 12–18 minutes, checking earlier for thin pieces and allowing longer for thick portions. Verify 145°F in the thickest part with a food thermometer. If glaze darkens too quickly, loosely cover with foil; do not broil parchment.
- Use a clean utensil to brush the reserved glaze over cooked salmon. Serve one fillet per person. Refrigerate leftovers within 2 hours, or 1 hour above 90°F, in a shallow covered container at 40°F or below. Use within 3–4 days and reheat leftovers to 165°F.

Notes
Contains fish and soy. Standard soy sauce also contains wheat; check product labels.
Nutrition estimates count all glaze and one-fourth of the salmon, without sides. Salmon species and brands change values.
