Ingredients

  • 8 cups pasteurized nonalcoholic apple cider 1920 mL; no added sugar, not hard cider or vinegar
  • 1/2 cup orange juice 124 g; freshly squeezed and strained of seeds
  • 4 wide strips orange peel about 10 g, from a washed orange; avoid thick white pith
  • 2 3-inch cinnamon sticks
  • 6 whole cloves
  • 10 g fresh ginger peeled and thinly sliced

Equipment

  • 1 3- to 4-quart saucepan with lid
  • 1 Fine-mesh strainer
  • 1 Heatproof pitcher or second pot large enough for the batch
  • 1 Vegetable peeler
  • 1 Food thermometer for hot holding

Method

  1. Wash the orange under running water before peeling or juicing. Use a vegetable peeler to take 4 broad strips of peel with minimal white pith. Measure the orange juice separately, removing seeds. Peel and thinly slice the ginger.
  2. Combine apple cider, orange juice, orange peel, cinnamon sticks, whole cloves, and ginger in a 3- to 4-quart saucepan. Heat over medium-low heat for about 8–10 minutes, until steaming with small bubbles at the edges. Do not bring to a rolling boil.
  3. Reduce the heat to low, partially cover, and gently infuse for 20 minutes. Keep the liquid hot without boiling hard. Remove from the heat and taste a cooled spoonful; strain promptly when the spice level suits you.
  4. Carefully pour through a fine-mesh strainer into a heatproof pitcher or another pot. Remove and discard the peel, cloves, cinnamon, and ginger; do not serve the hard whole spices in mugs. Divide the finished batch into 8 equal servings, approximately 1 cup each. Let servings cool to a comfortable drinking temperature.
  5. If holding for a gathering, keep the strained cider at 140°F or warmer and verify with a thermometer. Otherwise refrigerate promptly in smaller covered containers, within 2 hours, and use within 3 days or the original cider’s earlier use-by limit. Reheat only the portion needed until steaming hot; cool before sipping.

Notes

Use pasteurized, nonalcoholic cider and check labels for individual allergen needs. No sugar is added, but the juices contain natural sugars. Nutrition is estimated per one-eighth of the strained batch using Tree Top 100% Apple Cider and orange juice. Whole spices, ginger, and peel are removed; their small, variable infused nutrient contribution is not quantified. Fiber is not displayed because the cider label does not provide a gram amount. Brands and evaporation vary.
