Ingredients

  • 1 cup whole milk 244 g, cold
  • 1 cup plain canned pumpkin puree 244 g, chilled; not pie filling
  • 3/4 cup plain nonfat Greek yogurt 170 g
  • 1 medium banana 118 g peeled, sliced and frozen
  • 1 tablespoon pure maple syrup 20 g
  • 1/2 teaspoon ground cinnamon 1.3 g
  • 1/2 teaspoon vanilla extract 2.1 g

Equipment

  • 1 Blender
  • 2 Serving glasses

Method

  1. Use a previously frozen banana: peel, slice, and freeze on a lined tray until solid, at least 2 hours, then transfer to a freezer container. The 5-minute recipe time assumes it is already frozen and all other ingredients are cold.
  2. Add milk to a clean blender, followed by pumpkin, yogurt, banana, maple syrup, cinnamon, and vanilla. Secure the lid. Blend until completely smooth, about 45–60 seconds, stopping and unplugging the machine before scraping if needed.
  3. Divide evenly between 2 glasses, about 1 1/2 cups each depending on aeration, and serve immediately. Refrigerate any extra covered within 2 hours, or 1 hour above 90°F, and use within 24 hours for best quality. Stir before drinking.

Notes

Contains milk. The 5-minute time assumes a previously frozen banana; allow at least 2 hours if freezing it yourself. Nutrition is estimated per half batch, including maple syrup.
