Ingredients

  • 1000 g orange sweet potatoes peeled weight; about 2 1/4 pounds, cut into 1-inch chunks
  • 6 tablespoons unsalted butter 84 g total; divided: 4 tablespoons for filling, 2 for topping
  • 1/2 cup whole milk 120 g
  • 80 g light brown sugar about 6 tablespoons packed; divided equally between filling and topping
  • 1 teaspoon ground cinnamon 2.6 g
  • 1/2 teaspoon fine salt 3 g
  • 1/3 cup all-purpose flour 40 g
  • 1/2 cup chopped pecans 60 g

Equipment

  • 1 9-by-9-inch baking dish
  • 1 Large pot and colander
  • 1 Potato masher
  • 1 Small mixing bowl
  • 1 Instant-read thermometer

Method

  1. Heat oven to 350°F (177°C). Set out a 9-by-9-inch baking dish. Place the sweet potato chunks in a large pot, cover with water, and bring to a boil. Reduce to a steady simmer and cook 15–20 minutes, until a fork slides through easily.
  2. Drain thoroughly and let steam escape for about 5 minutes. Mash while warm with 4 tablespoons butter, the milk, 40 g brown sugar, cinnamon, and salt. Spread in the baking dish. The filling should be thick and spoonable, not runny.
  3. Mix the flour, pecans, and remaining 40 g brown sugar in a small bowl. Rub in the remaining 2 tablespoons butter until loose crumbs form. Scatter over the filling without pressing down.
  4. Bake 30–35 minutes, until the topping is golden and the center reaches 165°F (74°C). If nuts brown too quickly, tent loosely with foil. Rest 10 minutes before dividing into eight portions.
  5. Refrigerate leftovers in shallow containers within two hours, or one hour above 90°F (32°C). Use within 3–4 days; reheat to 165°F (74°C).
