Ingredients

  • 600 g orange sweet potatoes peeled and cut into 1/2-inch cubes; buy about 1 1/2 lb
  • 1 tbsp olive oil divided
  • 1/4 tsp fine salt 1.5 g
  • 1 small onion diced, 100 g
  • 2 garlic cloves minced, 6 g
  • 1 tsp ground cumin
  • 1 tsp salt-free mild chili powder blend
  • 1 can no-salt-added black beans 15 oz, drained and rinsed, about 255 g drained
  • 1/2 cup frozen corn 70 g
  • 2 tbsp lime juice 30 ml
  • 1 jar mild salsa verde 16 oz, 454 g
  • 10 6-inch corn tortillas about 235 g total
  • 1 cup shredded Monterey Jack cheese 112 g
  • 1/4 cup chopped cilantro 10 g
  • 2 tbsp water for warming the filling

Equipment

  • 1 Rimmed sheet pan lined with parchment
  • 1 Skillet
  • 1 Baking dish 9 by 13 inches
  • 1 Mixing bowl
  • 1 Instant-read thermometer
  • 1 Aluminum foil for covering
  • 1 Microwave-safe plate for warming tortillas

Method

  1. Heat oven to 400°F. Toss sweet potato cubes with 2 teaspoons oil and salt on a parchment-lined rimmed sheet pan. Roast 25–30 minutes, turning once, until fork-tender. Lightly mash about half the cubes with a fork, leaving the rest in small pieces.
  2. Meanwhile, heat remaining teaspoon oil in a skillet over medium heat. Cook onion 5–6 minutes until softened. Add garlic, cumin, and chili powder; stir 30 seconds. Add beans, corn, and water; cook 3–4 minutes until hot. Stir in roasted sweet potato and lime juice.
  3. Spread about 1/2 cup salsa verde across the bottom of a 9-by-13-inch baking dish. Warm tortillas in small stacks wrapped in a damp paper towel in the microwave, 20–40 seconds or until pliable. Keep covered and warm as you work.
  4. Divide the filling among the 10 tortillas, approximately a generous 1/3 cup each. Roll gently and place seam-side down in the dish. If a little filling will not fit, tuck it between the rolls rather than forcing them closed. Spoon all remaining salsa over the tops, covering exposed edges, then sprinkle evenly with cheese.
  5. Cover loosely with foil and bake 20 minutes. Uncover and bake another 5–10 minutes, until sauce bubbles and the centers reach 165°F. Rest 5 minutes, scatter cilantro on top, and serve 2 enchiladas per person.
  6. Refrigerate leftovers in shallow containers within 2 hours, or 1 hour above 90°F. Use within 3–4 days. Reheat covered with a small splash of water until the centers reach 165°F.

Notes

Contains milk. Use vegetarian-rennet cheese if needed. For gluten avoidance, verify tortillas, salsa, and seasonings. Nutrition is estimated for two enchiladas using a specific corn tortilla and salsa label; salsa sodium varies substantially. All filling and measured oil are included; optional sides are not.

This version roasts diced sweet potatoes, adds sautéed onion and corn, omits feta, canned chiles, jalapeño, and sour cream, and uses less cheese. Follow this card for quantities and timing.
