- Heat the oven to 375°F. Grease a 9-by-13-inch baking dish with 3 g of the butter. Bring a large pot of unsalted water to a boil.
- Cook the noodles 2 minutes less than their package directions, until flexible but still slightly firm in the center. Drain well. Meanwhile, melt the remaining butter in a large saucepan over medium heat and cook onion and finely diced carrots for 7–8 minutes until softened.
- Stir flour into the vegetables and cook for 1 minute. Gradually whisk in milk and the 1 cup water. Bring to a gentle simmer, stirring, and cook for 4–5 minutes until lightly thickened. Stir in salt and pepper.
- Fold in turkey, peas, and drained noodles. Transfer to the prepared dish, spread evenly, and sprinkle with cheddar. Bake for 25–30 minutes, until bubbling and the center reaches 165°F on a food thermometer. Loosely cover with foil if the top browns early.
- Rest for 5 minutes, then serve in six portions. Refrigerate leftovers promptly; use within the original turkey storage window or freeze promptly.

Notes
Contains wheat, milk, and egg. Nutrition is an ingredient-weight estimate using plain roasted skinless turkey breast. Brined turkey, noodle brands, and cheese can change values. Timing assumes noodle cooking and sauce preparation overlap; bake longer if necessary to reach 165°F. Use safely refrigerated cooked turkey, not raw poultry.
